Molten Goodness With Bacon


This is good.

This is very good.

This is very, very good.

This is a grilled pimento cheese sandwich with bacon.

The grilled pimento cheese sandwich with bacon is everything that is good stuffed between two pieces of golden fried bread, with bacon.

The grilled pimento cheese sandwich with bacon is neither neat nor healthy.

The grilled pimento cheese sandwich with bacon is not loaded with free radical neutralizing antioxidants nor essential vitamins and minerals.

The grilled pimento cheese sandwich with bacon will not reduce wrinkles or add years to your life. In fact, the grilled pimento cheese sandwich with bacon may do just the opposite. But I ask you, is a long life worth living without the grilled pimento cheese sandwich with bacon? I think not.

Try one for yourself.

MAKES 3-4 SANDWICHES.

bacon, cooked
8 oz extra sharp cheddar cheese grated fine
2 oz cream cheeses softened and cut into pieces
4 Tbl mayonnaise
1 small jar pimentos
OR
1 small red bell pepper, roasted, peeled and diced
1/4 tsp crushed red pepper flakes
salt & pepper
bread
butter

Mix cheddar, cream cheese, mayonnaise, pimentos or red pepper and any liquid, crushed red pepper, S&P in a bowl until combined. Spread on bread. Top with strips of cooked bacon. Cover with second slice of bread. Melt 1/2 of butter in skillet over med-low heat. Cook the sandwich until the bread is golden (about 5 min). Top sandwich with pieces of remaining 1/2 tbl of butter and flip. Cook until golden (about 5 min more). Enjoy with plenty of napkins.

  2. Hey Chris, I am so glad I just noticed this blog post AFTER we went shopping, because on a cold and grey day like today such a sandwich would suit me just fine... with beer! Now at least I am not subject to temptation, ha ha. :-)

    And listen, I am not much of a cook but I actually did something this Thanksgiving that WORKED and I was so proud. WholeFoods Market recipe for a raw cranberry relish!

    Ingredients - ONLY FOUR! I love it!
    1 cup dried cherries
    12 ounces fresh cranberries
    1/2 teaspoon ground cardamom
    1 cup golden brown sugar, packed

    Method - BRAINLESS! I love it!
    Combine cherries, cranberries, cardamom, and brown sugar in a bowl. Process half of mixture in processor or blender until coarsely chopped. Transfer to bowl and repeat with rest of ingredients. Refrigerate for one day before serving.

  3. With 2 small kids, I have grilled a hell of a lot of cheese sandwiches and sure I have added bacon, bologna, eggs, hot dog, etc, for but this makes me proud to know you, Chris!
